What to make with mini shrimp excluding all pasta dishes?

I've had too many pasta dishes lately and I have no meat for dinner tonight; only mini shrimp in the freezer. What can I make with the shrimp? Please keep the ideas fairly simple and preferably quick, as I have only an hour and a half to get dinner on the table!





Thanks so much in advance!|||Generally shrimps take very short time to cook, here are 2 recipes for shrimp but not sure how mini are your shrimps.





Black Pepper Caramel Shrimp





3 tablespoons peanut oil


1 pound shrimp, peeled and de veined, or precooked cocktail shrimp, thawed and peeled


6 garlic cloves, minced


21⁄2 teaspoons freshly ground black pepper


2 tablespoons fish sauce


1⁄4 cup canned or homemade, chicken stock


3 tablespoons Caramel Syrup (recipe follows)





Process





1.Set a large wok or skillet over medium-high heat and allow it to heat thoroughly, about 3 minutes.


Add 2 tablespoons of the oil and swirl to coat the pan. Add the raw shrimp, if using, and cook, stirring constantly, until pink and firm, 2 to 3 minutes. Transfer the shrimp to a bowl and set aside.





2.Add 1 tablespoon oil to the wok and set it back over medium-high heat. Add the garlic and cook, stirring constantly, until it begins to brown, about 1 minute. Immediately add the pepper and cook for 10 seconds.





3.Raise the heat to high, add the fish sauce and chicken stock, and bring to a boil. Add the caramel syrup and stir constantly until the syrup dissolves in the sauce, then return the sauce to a boil.





4.Add the cooked shrimp. Toss and stir until the sauce is bubbling and the shrimp are heated through, about 1 minute.





Or Breaded Shrimp





Ingredients:


1lb large shrimp (peel and de veined, and butterflied if you choose)


4 cups water


1 ½ cups corn starch


2 eggs


2 cups breadcrumbs


¾ teaspoon garlic powder


¾ teaspoon onion powder


Oil (for deep frying)





Process





Step 1: In a large bowl mix water, cornstarch and eggs. On a plate or using a shaker bag mix breadcrumbs, onion and garlic powder.


Step 2: Dip the shrimp into the cornstarch mixture until completely coated and then roll them in the bread crumb mixture. Stir the cornstarch batter, and then dip the shrimp back into the mixture and roll in breadcrumbs once more.


Step 3: Deep fry shrimp in batches until golden brown. Drain on paper towels.|||I have made this many times, its really good, and i use the mini salad shrimp, which i think are basically what you have



Shrimp Caesar Salad Pizza



Ingredients

1 (12-inch) prepared Italian-style pizza crust

3/4 cup creamy Caesar salad dressing, divided

1/4 cup shredded Parmesan cheese

1 romaine lettuce heart, chopped

1 tablespoon olive oil

2 garlic cloves, chopped

1/2 pound cooked shrimp, tails removed

2 tablespoons fresh lemon juice

1/8 teaspoon salt

1/8 teaspoon black pepper

Instructions

Preheat the oven to 375°F.



Place the crust on a pizza pan or baking sheet. Spread 1/2 cup dressing over the top of the crust and sprinkle with Parmesan cheese. Bake for 10 to 12 minutes, or until bubbly.



Meanwhile, in a medium bowl, toss the romaine lettuce with the remaining 1/4 cup dressing; set aside.



In a medium skillet, heat the olive oil over medium heat. Add the garlic and shrimp and sauté for 1 to 2 minutes, or until heated through. Stir in the lemon juice, salt, and pepper.



Spread the romaine mixture on the baked pizza crust and top with the shrimp mixture. Cut into wedges and serve.|||How about shrimp toast?





Approximately 25 slices day-old bread


1/2 pound fresh shrimp, peeled and deveined


1 egg


1-2 tbsp. flour


Cooking oil


1 sm. white onion, quartered


Salt or soy sauce


Prepare bread by cutting the crust off all sides. Place all ingredients except bread and oil in a blender. Blend to form a thick paste. Apply paste to one side of bread. Cut bread into quarters to form squares or cut diagonally to form triangles.


In a pan heat oil to 350-375 degrees. Place toast in pan paste side down. After browned, turn once to brown on the other side. Drain on paper towels. Sprinkle with salt while hot or place a drop of soy sauce on each piece before serving.|||How about Shrimp Cakes? Can serve with a nice salad for a filling meal.

Shrimp Cakes Makes 4 servings

1 pound shrimp - peeled, deveined and chopped


1 1/4 cups coarsely crushed buttery round crackers


1/4 cup chopped onion


2 jalapeno peppers, seeded and chopped


1 cup mayonnaise


1 tablespoon prepared yellow mustard


10 dashes hot pepper sauce (e.g. Tabasco™)


celery salt to taste


1 tablespoon Parmesan cheese


1 quart oil for frying





1 .In a medium bowl, combine the shrimp, crackers, onion and jalapeno. Stir in the mayonnaise and mustard, and season with Tabasco and celery salt. Mix in Parmesan cheese. Form into 8 patties.





(Can bake these instead.)


2. Heat about 1/2 inch of oil in a deep heavy skillet over medium-high heat. When oil is nice and hot, fry the patties for about 5 minutes per side, or until golden brown.


----|||Make Jambalaya, easy..........


Sautee 1/2cup of onion until transparent then add diced tomatoes and cook for 5 min, season with salt and pepper and thyme and basil .......if don't have fresh dry is ok. Now add the shrimp and 2 Tsp of tomato paste, add one cup of converted rice, two cups of water, mix well , cover it and bake in the oven for about 30 minutes or until the rice is tender. Enjoy|||Shrimp Ceviche: chopped up some onion, tomato, cilantro %26amp; serrano peppers add fresh lime juice. Mix it all up and add V8 and cooked shrimp. (if the shrimp is raw...add it also but refrigerate for atleast an 1hr. The lime will cook the shrimp) enjoy!|||Make an omelet with the shrimp. Use onions, spinach, roasted red peppers or bell peppers, a mild cheese, Toast and home fries complete the meal.|||How about a shrimp omelet or shrimp quesadilla|||Try shirp with rice and vegetables. It'll be different from pasta.|||Shrimp nachos or a shrimp cesar salad both are yummy.|||shrimp fried rice
